Your too much Opus...  zftcg, If your inclination is not to skimp...go with the Dom...however, one could make a case for a Rose...in that case, go for the Billecart Salmon NV Rose. Advise from a guy who has been married (to the same woman) for 27 years...and counting!Good Luck!

Thanks to all who replied. We just got back from our vacation, and I wanted to give you all an update.
First of all, regarding the wine, I ended up going with the St. Hilaire. I appreciated all the other suggestions, but the situation was that the hotel only had the two options, and there was no way for me to deliver a bottle ahead of time. If I had had a choice, I would have gotten a Prosecco, which she loves. But other than that, she's not a big wine lover, and I realized she would be just as happy with the St. Hilaire. And she was. We both actually enjoyed it very much.
And oh yeah, she said yes!
So thanks to all for the advice (wine-related and otherwise).

Try a 1996 Champagne Jean Laurent Blanc de Noirs Brut if you can find one. Serious Champagne from an underrated grower-producer.
