If it does not have to be a table wine, Sauternes is where you should be looking.
!975 was a great year for Brunello and the better Tuscan wines, but success rate in finding a sound bottle is not going to be great.
Bordeaux was hard as nails when the 1975 was released, and the trade talk was that the wines would age for generations. Tens years later they were still hard as nails; same twenty years, and then they ran out of fruit. I'll sell you three for $200 if you are interested, and I'm open to counter offers.
Happy Birthday, I am also born in 1975 and my birthday is two weeks away
I would probably look for Sauternes, as you can easily tell if the wine is in good shape plus it was a good vintage.
Here is a list of '75s I've had in the past in rough order of preference. Most of everything on this list you can find for sub $200 in auctions. Exceptions are the wines listed in tier 1 along with Haut Brion, Cheval Blanc, Trotanoy and Latour.
Tier 1 Petrus Vega Sicilia Unico d'Yquem Penfolds Grange
Tier 2 Haut Brion Diamond Creek Red Rock Terrace Cheval Blanc P. J. Valckenberg Wormser Liebfrauenstiff Kirchenstck Riesling Auslese Trotanoy
Tier 5 La Tour-Blanche Suduiraut Leoville Las Cases Josefinengrund Trittenheimer Apotheke Riesling Auslese Palmer Montrose Gruaud Larose
Tier 6 Beaulieu Vineyards Georges de Latour Le Gay Robert Mondavi Cabernet Sauvignon Les Ormes de Pez
For Historical Value Only Grand Barrail Lamarzelle Figeac Robert Mondavi Pinot Noir Petit Village Sonoma Vineyards Alexander's Crown Cabernet Sauvignon Beaulieu Vineyard Burgundy
Be careful, some of those 1975's will cost a fortune, and all you'll get is a mouth full of scorching tannins. Yes, many of the 1975's are hard, many are fading, and you'll have to look for a bottle that has been properly stored, and find it for the right price.
Really, the most important fact is; you thought enough to seek out a bottle from her birth year of 1975.

As I told you at dinner, ( ) think Champagne.
I had the '75 Philiponnat Clos des Goisses a couple of years ago and it was stunning.

W-S shows no Clos des Goisses presently in the market (which must indeed be stunning). However, I'd think the 1975 Bollinger RD would likely show well.
