KSC02, the key for me with all Paillard wines is the disgorgement date, including their NV. In my opinion, their NV wines improve over time much like their vintage wines. This wine was rich and round, offering dried fruit, red berries, hazelnut, buttered pastry with hints of roasted coffee all balanced against a wonderful mineral streak and active acidity.

As for the Cattier, this was a gift that I know little about. This was clearly a Pinot driven wine and a very stylish wine. I'm thinking this wine may improve with more time. The nose was offering apple, fig, truffles and a little smokiness. The nose led me to think I would find more weight to the wine, which is why I think time will help. The wine also offered some ginger and solid acidity on the finish. I liked the wine, and it was very stylish. I would like to try again in a year or two.

Helpful information indeed. I greatly appreciate Paillard's printed disclosure of disgorgement dates and, since tasting these the other week, appreciate them and will begin to seek a few out.
