I'd never put an old delicate wine in there, but a good 60 seconds on frappe for a young wine seems to equal an hour to a few hours in a decanter. That said, air (decanter, blender, Vinturi), is never a substitution for aging. I've done it a number of times, only with younger tannic reds that need air badly (yes, I know, aging them properly is best). Blending doesn't screw them up in any way shape or form. Buy two identical wines like a young CdRhone, pop one in a decanter for the afternoon, frappe the other one for a minute. Don't speculate, see for yourself.This message has been edited. Tried it. No go - turned the wine into Welch's....so Parker would rate it a 100. Really, a non-starter, for me. There was a blurb about this technique in a recent WS issue. Someone tested it and found it did “help” young wines. I could see how it would work, but I don't like to drab so I don’t have use for it. | |||
