I had this moment of inspiration last night as I was trying to figure out what to whip up for dinner at around 8:30....
I threw some duck legs confit into a skillet with a little olive oil, skin side down... crisped it up and rendered the fat... then I added some chopped onion, a little salt and pepper, and then a few cloves of garlic.... let it caramelize for awhile, and... I pitted and halved some cherries and threw them in, and also threw in a handful of blueberries... tossed it around for a little bit, and then added about a cup of red wine and let it reduce.... Oh was it delicious..... The fruit and onions made sort of a compote. I haven't done anything like this in a long time, but I was reminded once again of how well duck and berries go together.... I paired it with a 2001 Seghesio Old Vines Zinfandel. |

I haven't done blueberries, but warm cherries go really well with duck and other meats and sausages. Try roasting them whole briefly, with pit and stem attached. When hot, they burst with flavor and look extremely appetizing against the white of the plate. Combine them with some lardoons and few inner leaves of chicory and you will have another great and healthy addition in your arsenal to go with duck confit...or rabbit sausage.
