Doing one this weekend for our wedding tommorow. Sounded really fun, so I'm going to give it a try. Rubbing it down, stuffing with Gala apples, rosemary and cinnamon sticks, using a mop sauce and rootbeer bbq sauce. A keg of Three Floyds X(10%), small keg of Brugge Witte, case of Champagne, 6L of Cambria P.N.(for the masses) and multiple mags of good wine....even if the pork doesn't turn out, it sounds like a good time!

Congrats on the wedding. I’ve had a suckling pig cooked in one of those Chinese fire boxes. It was amazing. Hope it all goes well for you.

vinosnob,
You're not doing this yourself, are you? That's the kind of thing that takes constant attention, and I'm sure your bride would rather your mind be on her and your vows. I'd hate for you to have to interupt the wedding to go mop the pig.

Its only for the root beer bbq sauce for people to dip at their leisure.

I have a friend that is helping with the mopping, but the rest is all me. Also have about 10lbs of chicken wings(3 different rubs) that are going on as well for the reception. One of the great things about having the wedding at our house...close to my food and wine! Big Grin

Vinosnob,

I may have to crash the party tomorrow (later today) up in Fishers. I'll just follow the firetrucks. Wink Salud!!!

Suckling pig is great. We used to do this every year at my fraternity in college, complete with cheap beer. The head always ended up in someones bed...

Congrats!
