If you want a "truer Chicago experience", try Gene & Georgetti's. Business casual dress code. That probably ruins it for you. Another typically Chicago steak house is Gibsons. VM

We are also fans of Keefer's - forgot about that one. It goes a bit under the radar. I have heard of others not liking it as much, but we have only had good experiences. Across the street is Harry Caray's, which does make a good steak (as well as many other Italian-themed dishes) and I don't know if you can get much more Chicago than Harry.
