What types of wine pair well with wild pheasant? A buddy is in South Dakota right now on a hunt. I'm in charge of the wine.

I was thinking CdP/CdR and possibly some PN for the ladies.

You're on the right track. I would also consider Cru Beaujolais, depending upon preperation. Or even Barbera, or Alsatian Pinot Gris. Or Champagne. Without knowing preperation it is tough.

Cru Beaujolais with a few years on it is always my choice for Pheasant. In fact, that's what I'm having tonight.

I have no experience with wild pheasant, but much with commercially raised pheasant. I;d go with Pinot Noir or Chardonnay.


Just one more sip.
