We got this in fresh from our seafood distributor. Plain, it was probably the best tasting fish I've ever had. The flesh is so dark.

We served it with a Gorgonzola Hollandaise sauce. To die for!

next year, do yourself a favor and get some Copper River King Salmon... only in season from about late May, early June
