Answer is any red wine you like will taste great with Macaroni and cheese. It's like asking what is the classic pairing with cheese doodles.

I am partial to a sparkling wine with Mac and Cheese, especially if you chop up a lobster tail in it. Its great!!!

Yes! But as long as it is a "white" cheese and not the sharp cheddar as mentioned in the original post.

With sharp cheddar I'd go with a red. Last time I made mac n cheese with cheddar for my son I think I had a glass of cab with it at dinner.

It depends on the cheese used. The macaroni is not material. For a sharp farmhouse cheddar, I like Pino Noir. For a gloucester, I like a Syrah. If it is a Blue, I like a sweeter wine like an 8% alcohol semi-sweet Riesling. Some like Fontina and an Italian Chardonnay. But, it really depends on the cheese. You may never go wrong with a Pino Noir.
