It's the same for Dryers Grand Ice cream. Back in the south it was Eddy's Grand. Same commercials, different name. Just like Bring out the Hellmans and bring out the best is the same jingle. I think that companys bought out the other one and the name was so embedded in society they just don't want to let it go. What was first , Best Foods or Hellmans ? Does anyone know ?

I think Francis' recipe sounds incredible, and I'm going to have to try it. Although, I do confess that the canned celery thing has me a bit baffled. Did you REALLY mean to say this?

And I think Grun's approach to the notion also sounds wonderful. I think you're a soulmate from another life.... Smile

What about just going with raw tuna? I love tuna tartare...

Francis, what wine would you pair with your recipe?

And Grunhauser, what wine would you pair with yours?

I am doing this tomorrow and am drinking a Sauvignon Blanc, I think that it will pair with the capers very well. I will let you know tomorrow night.

OK, let me explain ...................

I don't go out and buy stuff like "cans of celery hearts", or "bottles of hearts of palm". I was looking through a cabinet and the hearts of palm was just there, like an orphan left on the steps of a church. The can of celery hearts was a mistake. I was buying some cans of pumpkin for a different situation and it was accidentally included. Fresh celery hearts, w/ the leaves included, are cheap and very tasty; they are in the recipe.

I have no doubt that raw tuna would work just fine. If that is what you like; and if you get the finest, top-quality tuna.

Water-packed tuna has no flavor; oil is the way to go. Dolphin safe is the only acceptable style. (I almost got the feeling that the original mention of this idea, the dolphin safe thought, was kinda sorta a bait line {no pun intended} for me to go off on an ecological tangent.)[I'm sure you'd all love that.]

Crab cakes are easy. I've got a bunch of recipes if you like.

I couldn't get that, but I was able to pick up a very nice bottle; Antonio Esteves Ferreira Soalheiro Alvarinho, Vinho Verde 2002. It was very good.

Made this tonight and it is great. My wife who likes next to nothing even likes it. Will let you know which wine we drank after and how it paired.

Drank a 2001 Concannon Sauvignon Blanc Selected Vineyards with this, and it went very well.

Hunter it has been a slow month, but I think some of it has to do with a lot of people checking out a non MTH, non left wing, non enviro-friendly thread from Francis.

Francis, you rock getting those tree hugger links back in some how. I have to commend you on that . And not to hijack too much, but going back to the begining when the topic of Hellmans/ Bestfoods came up. I asked someone that knew and here is the answer

In 1932 Best Foods and Hellmann's merged into the same family. They're

the Rockies, while Hellmann's mayonnaise has been sold east of the Rockies.

So even though Best Foods mayonnaise will have the Hellmann's name on it, it's

As much as people here, including myself, like to make fun of Francis this is a very good dish. The wife and I had friends with a weird diet over for dinner tonight, weird as in no chicken or beef only fish, no dairy, low salt diet. This Tuna Salad was a hit tonight. Had this as an appetizer along with Strawberry Spinach salad, Grilled Sword Fish and Fresh fruit for the Dessert. The Tuna Salad was a hit.

Francis stay away from the save the snail darter threads and stick to the cooking ones.

I had salad today for lunch, and there was tuna in there, canned, oil packed and of spanish origin. Ceci, red onion, celery, lots of lemon juice, lots of parsley, olive oil, dry pepper flakes, and ther e w as tu na in the re too. A dozen of spiced up quail eggs sunny side up, a Peroni, ciabatta, olives and filletti de melanzana. It was a fun lunch.

Tried this recipe yesterday, it was pretty tasty-

12 oz. solid white tuna
1/3 cup mayo
Dried herbs to taste (I used dill and a Provence blend)
1/4 cup chopped pecans
1/4 cup golden raisins
1 tbsp. red wine vinegar
1.5 tsp. curry powder
3 tbsp. mango chutney

Combine & serve w/flatbread, with or without lettuce.
