Excellent though much different than the '98 Cakebread Benchland. Lots of fruit, some secondary flavors, tannins are still noticeable, and some good acidity. Great buy at $60.

mareff- Actually, D does this one. But from watching her while preparing other items I'd say: 1 med-size Rabbit 1 white onion (coarse pieces) 1 1/2 cups Red Wine 1/2 cup Chicken Bouillon 2 Tbsp Olive Oil 2 Tbsp chopped Garlic Salt & Pepper to taste 3 sprigs of Rosemary 2 thick bacon strips (coarse) 1 Tbsp flour Heat the oil in a heavy bottom pot or dutch oven. Add the rabbit and brown (about 5 minutes, stirring to prevent sticking). Drain off the fat and add the onions, garlic and bacon (the bacon should be cut into small, coarse bits). Cook another 5 minutes, stirring. Add the wine, bouillon,flours and herbs to the pot. Place in oven at 400 for about 1 1/2 hours.

I thought I made a pretty decent Red Beans and Rice last night. I cut the spices by 3/4, but my family still complained that it was too spicy. Seemed just on the high side of mild, to me.

I get that all the time from my wife and in-laws. San Diego and Wisconsin/Indiana palates rarely align.  indeed.
