Excellent though much different than the '98 Cakebread Benchland. Lots of fruit, some secondary flavors, tannins are still noticeable, and some good acidity. Great buy at $60.

mareff- Actually, D does this one. But from watching her while preparing other items I'd say:

1 med-size Rabbit
1 white onion (coarse pieces)
1 1/2 cups Red Wine
1/2 cup Chicken Bouillon
2 Tbsp Olive Oil
2 Tbsp chopped Garlic
Salt & Pepper to taste
3 sprigs of Rosemary
2 thick bacon strips (coarse)
1 Tbsp flour

Heat the oil in a heavy bottom pot or dutch oven. Add the rabbit and brown (about 5 minutes, stirring to prevent sticking). Drain off the fat and add the onions, garlic and bacon (the bacon should be cut into small, coarse bits). Cook another 5 minutes, stirring. Add the wine, bouillon,flours and herbs to the pot. Place in oven at 400 for about 1 1/2 hours.

Filet with green peppercorn sauce. Deglazed pan with cognac, tossed in some minced shallot, added some cream, tarragon and just a touch of dijon. Cooked it down while the meat rested. Near perfect!

I thought I made a pretty decent Red Beans and Rice last night. I cut the spices by 3/4, but my family still complained that it was too spicy. Roll Eyes
Seemed just on the high side of mild, to me.

We made ground beef tacos, had some rice and beans on the side. No wine. Vin helped DnVsMom with the cooking of the meat. He has taken a big interest in cooking and says that he wants to be a chef when he grows up. I think I could like that. Smile
