I bought a couple of beautiful Saltspring Island (local spot renowned for lamb) lamb racks this afternoon, and as much as I love just roasting that cut, I need something with a bit of extra oomph to match a couple of big Aussie Shirazes, so...

I cut the racks into chops and put them into a marinade of Marsala, minced garlic, fresh rosemary, and lots of fresh-cracked black pepper (tilicherry). Tonight I'll sauté them lightly in a very hot pan and then put it in the oven to finish. While that's happening, I put the strained marinade in a pot with some brown sugar and reduce fast to about half volume. Throw in a pat of butter, and there's a fairly intense sauce just begging for a mouthful of big Shiraz to keep it company.

That's the plan, anyway. Big Grin

Experimented with some beef ribs tonight:

Grilled beef ribs marinaded in dok suni marinade
Steamed rice
Steamed broccoli

I decided beef ribs aren't my thing...too fatty and not enough meat.

Sunday sauce with Beef Braciole and homemade sausage with a 97 Altesino Brunello and some damm good football games.

Jerome Bettis can sleep tonight. If the steelers didn't win, he would have needed a body guard for life in Pittsburgh. Eek

Now it's Peyton Manning who will have the worst off season of any player in the NFL. He may need mental therapy before next year.

Best record > doesn't have to play the Patriots > home playoff game > GONE. Amazing.

I agree, but Manning deserves more blame than most QB's because he calls all of the offensive plays himself - every snap is his call and the steelers beat him to the punch all day.

On Friday night, I made stuffed chicken breasts on the grill...

Sauteed red pepper, mushroom, garlic and shallots in EVOO until tender. Sliced a pocket in each breast, stuffed with mixture and a slice of sharp provolone. Grilled. The side was green beans with toasted pecans and crumbled bleu cheese.


Go HOKIES!!!

Last night my eldest daughter brought dinner over, fed me and her family, did the dishes and left! What a deal. Cool

Lamb stew with butternut squash, carrots, apricots and minced onions in a delicious tomato and cumin flavored base. She wouldn't give me the recipe, the little #)$&&# Wink Topped with fresh cilantro. Very nice.

I made some garlic and cheese biscuits to go with.

2001 Viticcio CCR was a nice accompaniment.

My pie hole was very happy. Roll Eyes
