My cousin stopped through the other day and brought me more Venison, his friend also dropped off some steaks and ground Antelope. Thoughts?

Yes. I treat it pretty much like venison. It has a different flavor but it's exceptionally lean much like bambi.

if it's lean, I love to throw a little flour on it and stir fry it till crispy.

Being so lean, you'll likely want to include an egg into your ground meat when preparing hamburger patties.
If it's like the caribou ground meat I rarely have the luck of finding here, it should be awsome.

We have it regularily. Normally only the scrapes are grounded and we use that for sausage. Try adding some tasty cheese to the ground when making the pattie. I prefer that to egg or flour.

For the steaks, marinate in olive oil, garlic, and few herbs. Never grill past medium rare.

We do a lot with roasts and stews.
