Anyone have experience in cooking lamb this way? Suggestions for recipes or tips?

No experience but have had dishes cooked this way. What cut of meat are you trying to steam?

Had it last night at a restaurant in Paris. Was a shoulder. I think it was browned before it was put in the bag. Parsley and garlic were on it.

I've made several fish in this way. First experience with a meat.
