I am making lentil soup with ham tonight (with a mirepoix and chix stock base).

Any wine suggestions? New world or old world?

I'd say old world red, something with nice acidity from Italy or Spain.

I went with a 1998 Domaine Les Gouberts Gigondas. Very nice....

Nevermind the wine. Share up how you make your lentil soup. Smile I love it. haven't made it in a while and I'm always looking for something better. Do anything special? (type of bone etc)

Nothing really special, Hunter. And this time I cheated a bit. I usually use smoked ham hocks, but we had leftover ham from Easter, so I cut that up and threw it in.

2 parts onion, 1 part carrot, 1 part celery - all diced. Saute. Add chopped garlic, bay leaf, and thyme. Saute.

Two quarts chix stock and the lentils. Then add the ham. In about half an hour, good soup!!!
