Since I got such good advice last week on the Swedish meatballs, I thought I'd try again for another somewhat offbeat dish (and throw in the recipe to boot):
Grilled portabella burgers Briefly marinate large portabella mushrooms in olive oil, garlic, balsamic vinegar and whatever fresh herbs you have around (oregano, basil, and chives works well). Grill about 3 minutes with the cap up. Turn, and put a teaspoon of the marinade/herbs onto the gills, top with a slice of provole and grill about 3 minutes more til cheese begins to melt. Serve on toasted Kaiser rolls. Maybe a Cotes du Rhone as a pairing? |

PurpleHaze has a great recipe, and I like your idea of marinating them... maybe I'll combine both and see how they turn out.
As far as the wine, anything with "earthy" notes would be great. I also thought a nice CdR. |

I combined The Prof and PurpleHaze recipes for grilled portabello sandwiches last night and they were terrific. Used Prof's marinade and PH's suggestion of slice of grilled onion and tomato and feta cheese. Also fresh Iowa sweet corn and grilled red peppers on the side. Thanks for recipe.
