Is there a pairing that works? I've had the best luck with White Rhones. What else might work?

Depends on how authentic you want your ceviche to be, I guess. Lemon and Lime would sound more like a Dry Riesling from Austria, or even Australia. If you're being nuevo and use grapefruit and orange juice, I'd probably try a Viognier or even muscat.

I like Pinot Blanc (Alsace) when not too hot (chile), and if a little more spice, the Chenin Blanc/Viogner combo by Pine Ridge works just perfect!

Anything but wine. I will never understand the compulsion to serve wine with everything. The acidity in that dish will diminish the taste of any wine.

Just one more sip.

2000 Don Melchor, it's a South American place. I have some Lapostella Syrah but am anxious to try out the Don Melchor while it's still in market in case I want more.
