I made a "full blown" Cassoulet yesterday. Yikes. 7 hours to prepare, but pretty frickin good. Rich and carnivorous.

I'm new here so this is probably not the way I want to brand myself (trailer trash) but I recently made a chicken and dumplings recipe from Real Simple's "Fake It, Don't Make It" section and it was great.

The same meal is artfully and lovingly prepared from scratch in the Barefoot Contessa Family Style cookbook if you want to be authentic. But if you are pressed for time like me, here's the recipe:

Pick meat from rotissere chicken
Mix meat, one can of Campbell's cream of mushroom soup and one package of frozen vegetables (your choice, I used peas)
Spread in casserole dish
Bake for 20 mins at 350
Open one package of Pillsbury biscuits (the pop from the biscuit tube actually startled me; that's how infrequently I open biscuit tubes)
Place biscuits on top of mixture
Bake for another 10 minutes, or until biscuits are done

This is such a good rib-sticking meal. Check out Barefoot Contessa if you're a stylist. Smile

Made roasted garlic and chicken pizza last night paired with some full sail pale ale. Good pizza and beer, hard to beat.

I would have expected more of a shudder from the Pillsbury biscuits! Cool

I actually do have what (I think/you guys can be the judge) are some good recipes at home that I'd like to share with the group. I'll try to post them this weekend.

I am relatively new to cooking (started trying to learn 3-4 years ago), and to pairing food with wine. I hope to learn a lot here.

It wouldn't take too long to chop up a few mushrooms, maybe a little garlic, sautee them in a little butter, then add some cream and maybe Amontillado and a bit of sea salt, pepper, and nutmeg, reduce it a bit, and use that instead.

Well I'm not sure I can compete with the cream of mushroom soup, but...

New year's dinner (was up on the mountain with no TV, internet, etc til now....nice):
For fun we blind tasted 3 new world pinots with roasted red and yellow pepper goat cheese tarts and salmon puff pastries with cream shallot sauce.

Entree: Prime Rib roast, Yorkshire pudding, rosemary roast potatoes, sautéed wild mushrooms and Brussels sprouts with Santa Rita Floresta Petite Sirah Syrah 2003

Very nice night.

Went out to the local place tonight. I had a 16 oz. prime rib, cooked in a Jack Daniels glaze with mashed potatoes and veggie, after an appetizer of a stuffed red pepper with goat cheese. My wife went with the red bean and rice soup and the "shrimp boat". Washed it down with the house zinfandel. Not a memorable wine, but it was ok.
