I use an atlas to make the flat pasta sheets then do the rest by hand with a pizza cutter or pastry crimper. I agree with you that the pasta attachments for filled pasta tend to suck arse

Pear salad with burrata (delicious). Some of the best vinegar ever. Seared duck breast, the skin and the layer of fat were like bacon. Chocolate truffle with sea salt caramel inside. A nice meal if you ask me.

Grilled marinated (a' la Tex) skirt steak, teriyaki noodles, green salad. 2004 Rosemount Estate Syrah Balmoral.

kca, I had this nice meal with a flight of wine from Hug. A Viognier that was ok, and then a Pinot Noir, Zinfandel and Syrah that were all pretty good.

Don't know what we will be drinking, but here is tonight's menu: Wood Roasted Heirloom Tomatoes with House Made Pasta, Fresh Goat Cheese and a Rock Shrimp-Panzanella Salad ~~~ Wild Mushroom-Black Truffle Pot Pie with an Aged Madeira ‘Crème Brulee,’ English Peas and Slow Roasted Shallot Broth ~~~ Sushi ~ Sashimi ~ Crudo ~~~ Grilled Hawaiian Opah and Maine Lobster ‘Confit,’ a Medley of Clams, Local Crayfish and Clam Chowder Jus ~~~ Mishima Ranch Wagyu Beef Two Ways with Fall Bean Pesto, Cabernet-Bone Marrow Glaze, Thyme, and Carrot Butter ~~~ Layered Milk Cake and Gold Raspberry Mousse, White and Dark Chocolate, Peppermint and Three Melon Sorbets

Sorry PWI - it was Byron. I normally enjoy this wine, but with the Scallops I found the wine had to much oak.

Tonight: Heirloom Tomato Salad with smoked Gouda, basil, aged balsamic and EVOO. Lobster Bisque with Cognac and Saffron. Grilled Top Sirloin.

Tonight: Roasted Chestnuts, Parmesan, French Bread, Cheese (various), Crackers with cream cheese , crab, and chinese sweet sauce, cured meats, Turkey, Ham, Stuffing, Candied Yams, Cabbage rolls, Potatoes, Cranberry Sauce, Pea Salad, Cranberry salad, Pumpkin Pie, Apple Pie, and other apps. Blue Mountain Pinot Noir for sure, various other wines. Sauterne and Port (yet TBD). Oh and 12 people (family and friends).
