have a presentation and we selected Shafer wine as a project. I remember during a tour with J winery that they gave us some kind of snack or appetizer that changed the way the champange (I think it was champagne) played with our palette.

is there such a thing with red wines? what do you recommend that would change the way it plays iwth your palette for Shafer 1.5? nothing too pricey please.

The classic way to soften the impression of a young tannic wine is to serve a soft, mild cheese with a fairly neutral bread or cracker. The cheese coats the mouth insulating it from the tannins, so the fruit shows through better.

The opposite effect is obtained by serving fruit. An aged acidic cheese like sharp cheddar does the same thing, making the wine seem harsher.
