Thanks, all, again for the advice in the "What to drink..." post in Wine Conversatinos. Mrs.-to-be-BRR and I enjoyed a fine evening at Serafina and did indeed take the 1995 Dalla Valle Cabernet Napa Valley with us. Here are my impressions:

Poured two glasses and didn't touch them for about 1 hour. The rest was decanted. Very pretty plum color with a tiny bit of pink to the edges. The nose was gorgeous (and, in retrospect, probably the best part of the wine): sweet and creamy currants, touch of soil and dark, looming berries. Very complex and intriguing! The wine was like velvet, with near perfect balance. At first, the fruit was hiding, and the wine showed mostly earthy, aged notes. But, after awhile, the blackberry and currants came out, with a touch of savory herbs on the finish. Very nice, very elegant.

I guess this is what middle-age Napa Cabs are, and it's just not what I like best. Don't get me wrong: this would probably be RIGHT up someone's alley. Just not mine. Very good, but not amazing. Cool

She was just about on-par with my impressions. She's a fan of big, powerful cabs (and, well, men...obviously Big Grin). She definitely enjoyed it, but wasn't blown away.

your marriage is to a GOOD start, seems like you both have the same wine taste and taste correlation is very important in marriage. Salut!
