1982 Moët & Chandon Champagne Cuvée Dom Pérignon - France, Champagne (6/19/2008)

Tasted June 19, 2008 at an offline.

Opened and served immediately. Cork was stuck in the bottle so the cap snapped off and the remainder had to be removed with a corkscrew. The wine inside was more than fine. Yellow to dark yellow color in the glass, clear hue throughout with ultra fine and light beading. Upon opening the aromas of roasted coffee and carmelized apples waifed up from the bottle follow by additional notes in the glass of toast. dough, yellow apples and pears. Not even a hint of sherry on this well aged champagne. Flavors of tangy yellow apples, pears and lemon with a fine mousse and a medium finish. Medium to bright acidity, full bodied. Held strong and consistent through the end of the dinner around the 3 hour mark. Maybe just a hair step behind the bottle in PA 2 years ago. Well done. (95 pts.)

wiml, as you know, the one we enjoyed in Philly was showing best after several hours of air.

We never gave this bottle a chance for much air! Smile

I revisted at 3 hours and it was rock solid as the first tasting of the evening. Didn't budge.
