Opened last night and had with Grilled Filet and Mushrooms in a Vanilla-Red Wine sauce. This sucker was a chameleon over the 5 hours that I decanted / enjoyed. On opening, this was drinking quite wonderful. As full-bodied as it is, it was quite smooth and quite enjoyable. About an hour after opening, it got fairly tight and tannic, and the fruit diminished for a short period of time. After 3 hours, this started opening back up and showing completely differently than previously, with a ton of fruit, good balance, and a HUGE finish. After 5 hours, the wine was incredible. Wonderful, wonderful balance. I will not open another for 3 years. This baby is a monster.

Thanks for TN, MC I bought a bottle of this last year and did not know when to open this one up, especially after tasting the 97' Wedding which was a tight, tannic monster that did not open up even after 12 hours of decanting!!!. Sounds like it is quite drinkable now.

I've had very few Fisher's, but always enjoyed. Maybe a question more in line for 'Dining and Cooking', but how do you make a vanilla-red wine sauce? Sounds like a great combo (and I love cooking with vanilla).
