Wine dinner at Industry (NYC) Sunday Sept. 22
Hamachi Tuna w/ lemon oil, selgris and chive Krug NV Bright minerals and acid up front, with some creamy toasty fruit on the palate. Dense and a touch tight, with a long finish with notes of lemon and almond skin. (91) 1988 Pol Roger Sir Winston Churchill 3L. Very clean nose with some butter and minerals. Light toast, with rich notes of crisp apples and a long mineral finish. (92) 1995 Didier Dageneau Silex Magnum Tremendous sauvignon blanc nose, with grass, gunflint and lime notes followed by an interestingly nutty Burgundian finish. The Oak is fully integrated until it peeks out on the finish, very good and the best match for the dish. (92) Butter Poached Lobster w/ caramelized endive and vanilla brown butter. 1993 Dom Perignon Crisp dense fruit, very elegant but too young and tight. Needs time. (89) Laurent Perrier NV Grand Siècle La Cuvée Champagne More open, and a bit more luscious. Some candied fruit and strong minerals with a long creamy finish. (90) 1995 Kistler Kistler Vineyard Chardonnay Fat, open nose. Lemony acid up front followed by intense tropical fruit, with notes of coconut, hazelnut, and buttery oak. Long fat finish Perfect pairing w/ the Lobster. (94) Sweetbread Ravioli w/ wild mushroom and truffle foam. 1981 Ridge Monte Bello Ripe fruity nose with some hints of leather. The fruit really opens up on the palate, with the layers of leather and basil woven in. Best with the dish. (92) 1975 Ducru-Beaucaillou Meaty nose, roast beef, iodine and red fruit. Medium bodied with good acid balance on the palate against earthy bright red fruit. This wine is holding on though I think it may soon start to decline. (91) Striped Bass w/ Fava beans, Salsify and a Chilean red wine glaze. 1982 La Conseillante Beautiful nose, not overly mature. Complex ripe fruit. This wine finishes with a long elegant, smokey finish. (94) 1999 Rousseau Mazy Chambertin Medium bodied. The fruit is quite closed down. Shows some red fruit with bright acids and a slightly sharp and green finish. (88) 1999 Rousseau Ruchottes Chambertin Dark roasted fruit on the prodigious nose. Lots of plump red fruit on the palate with just the right amount of balancing acidity on the long rich finish. Best food match.(93) 1993 Alain Michelot Nuit-St-George Les Porrets Rich nose showing good development. Good acids though the fruit is leaner on the palate than the nose would suggest. Medium bodied with a medium finish. (90) Lamb Rack w/ Chanterelles, celery root puree and braised shank. 1977 Ridge Monte Bello Wonderful sweat red fruit on the nose. Big, rich fruit on the palate layered with notes of meat and cassis unfortunately followed by a slightly truncated finish. (90) 1984 Ridge Monte Bello Monster nose of crystallized fruit, reminiscent of some Spanish wines. On the palate, laser like clarity of raspberry fruit, with layers of complex flavors including some Oak and Soy sauce. Very long finish. Best food pairing. (94) 1997 Harlan Estate Massive dense nose of sweet fruit and vanillin Oak. Dark rich fruit with a hint of liquorices. There is an over ripe quality that reminds me Quintarelli Amarone. Massive wine with an equally impressive long finish. Utterly overpowering to the food. A meal in itself. (97) Assorted Cheese Fresh Berries w/ Chantilly 1893 D Oliveira Malvasia Madeira Sharp yet sweet nose. Incredible mouthfeal with layer upon layer of flavor. Everything from Burnt blood orange peel, Chocolate, toffee and a finish of crème caramel. Spectacular! (97) Offered but not tasted due to time constraints 1990 DYquem 1988 Hugel Riesling SGN 1988 Hugel Gewurztraminer SGN 1997 Navarro Select Cluster Late Harvest Riesling 1988 Paul Jaboulet Aine Hermitage La Chapelle ![]() |
