The color was pale gold. The wine was mute when first opened with just a faint woody aroma and taste. However, in about 15 minutes, it revealed a pleasant, fresh baked bread aroma with the taste of crisp green apples. The finish, while not long, gave a refreshing, "lip-smacking" reminder of how champagne is a great food wine. And speaking of food...
I enjoyed this champagne with a fantastic, vegan, organic, “live foods” meal at Roxanne’s in Larkspur, CA. I was quite skeptical about going to this restaurant even though it has been very highly rated. It didn't seem like it would be my cup of tea -- They operate under the belief that cooking food destroys the health benefits (and many of the flavors) of food. Well, I'm not ready to adopt their diet full-time, but this meal was GREAT. Everything. Each dish was full of taste surprises that were a joy. I can only compare it to the type of presentation and thought that goes in to each dish at the French Laundry. So if you are in the Bay Area, and enjoy branching out with foods, try to get in to Roxanne's.
It takes a lot of good beer to make great wine.
