The recent price reductions by Caymus made me very curious, especially when I read that Caymus produces 37,000 cases of their Cabernet each year.

Well, I was surprised as a deep black/purple opaque juice, with notes of vanilla, cedar, spices, and lush dark fruits coated the glass. The 2007 Caymus Cab is velvety smooth, lush, concentrated, in balance, and an overall excellent wine, and far better than I had anticipated! Enjoyed it now, or cellar for 15+ years. There are many stores selling this wine for $59.95. 92/94 points.

Now I'm really curious about the 2007 Caymus "Special Selection", which can now be found for $104.99!

It is my review! I had the 2007 Caymus last night at Ruth's Chris. My score might seem lofty, but I was so surprised at the quality and concentration, 92/94 seemed appropriate. Simply put, the 2007 Caymus Cabernet is the best Caymus Cabernet that I ever remember! (This bottle was not the "Special Selection")

Gkapoor---I believe K&L & winex (in your area) currently have the 2007 Caymus available for $59.95 per bottle.

I've had this on multiple occassions so far. It has been out in my area for a couple of months.

And I will agree with Latour67...this is the finest regular Caymus I have had to date. I would also agree with the score range of 92-94.

Perhaps another indication that '07 really will be an exceptional vintage in Napa/Sonoma? I know that the Chardonnays that I have tried have been very good to excellent.

The Costco in my area (Concord) has the 06 SS for $99!!

Yep! It's difficult to deny that rich, lush, fragrant, fruit ladened wine is anything but excellent!

I even thought that bottle might be an anomaly, so I'm going to try it again soon. Also, I'm going to try the 2007 Caymus "Special Selection" ASAP. I just can't believe there can be a major difference!

One more comment:

Although the alcohol was 15%, it was well concealed in this thick, lush, and opaque wine. However, it will be interesting to see if the alcohol is detectable after there is some age on this bottle! Really, with 15% alcohol, I am curious on how this wine will age and mature! Confused

I have always found that Caymus Cab is a 10 year wine and then in general, the fruit starts to fade fast and the wine is not as good. They sorta of fall apart. This is true for the SS as well although I have had a few exceptional 15 year old SS. Add the higher alcohol in the 07, It should be very interesting if it makes 10 years. I have always enjoyed the regular Cab sooner than later.

Had a bottle of the 06 regular Cab at the "Keg" at Desert Ridge in Phoenix a few weeks ago. They charged $96 for it, totally reasonable. I thought it was wonderful and will look for the 07 for $60.

I had the 2006 Caymus SS last night after decanting it for about 3-4 hours. I can't say I was wowed by it. It is thick, had gobs of fruit and tannin, and some heat. It kinda reminded me of a 2005 Mollydooker EP that I had earlier. Picked it up at Costco for $96.

Lakersguy--

As a general rule, my target for Cali Cabs has been 8-12 years, but I've also had 20/30 year "Reserve" Cabs that were outstanding. Many Reserves from the 1970's & 1980's are still going strong. Of course, they didn't have 15% alcohol, but then again, the wines of today possess much more concentration of ripe fruit! I guess the Bottom-line is--- ??? Confused Also, I haven't had the 2007 Caymus "SS", and don't even know the % of alcohol! I'm anxious try a bottle of the 2007 SS soon, and hope to find one locally!

I found a 07 Caymus Cab and opened it this weekend. Paid $55.00. I decanted it for two hours. It needed more. After three hours it started to be real good with some of the heat/alcohol burning off. Overall, a very good wine that should get better. If drinking now, I would decant 4 hours.

2007 Caymus Cabernet Sauvignon - USA, California, Napa Valley (10/10/2009)
WIML90

Tasted October 10, 2009 at a retail tasting.

Dark garnet color in the glass, clear hue throughout. Nose of thistle, dark chocolate, a bit of meat and some rich black berries. Rich flavors for berries, mocha, blueberries and black cherries. Light to medium acidity, medium tannins, medium body. Drink over the medium term. (90 pts.)

Very good right out of the bottle w/little aeration, but agree that 3-4hrs. (or more) of aeration now helps loads. This really opened/mellowed over the 1+ that we drank it. 91-92 pts. now.
