100% Chardonnay.

Price unknown, as it's not available in Ontario.

Pale yellow-gold. Nose of cream, caramel, toast, oatmeal biscuit and yeast. Delicious fine bubbles that dance on the tongue and make your mouth tingle. Cream, oatmeal, pear, creme brulee, apple, citrus, tea leaf on the palate. Wonderfully complex. Still has good acidity and is just reaching its drinking window according to Mr. Depond. Long, long nutty finish. Delicious. 94 points

I was invited by the Ontario importer for Salon. Very lucky indeed! Didied is a very nice person, and demonstrates a passion for good wine, not only Salon. Smile

Light amber. Very fine bead, subtle mousse. Strong nose of fino & cognac. Smells like Hennessy Privilege (or at least what I remember that smell to be). It's been almost three years since I've had any cognac. And, I've never claimed to know spirits…

First taste matches the nose. Sherry! And cognac, but also hazelnuts and a bit of salt. While sherry predominates, I also find a bit of Sumatran creamy, sweet richness in this full-bodied Champagne. (I gave up coffee a few years ago, so again I'm relying on memory here…). Beautifully balanced.

The finish of this wine ranges anywhere from 45 secs to twice that at times. Perhaps I'm buzzed? Perhaps I simply need to brush my teeth? Whatever the case may be, it's muy pleasant… Cool

The '88 is a treat that, to me, should be enjoyed now. 94 pts. (1/1/2008) To put in context, I would have given the last three bottles of '90 Salon I was fortunate enough to enjoy over the last year ~ 96 pts. Perhaps I simply need to keep evolving along the "aged bubbly" curve, but my heart belongs to the '90 from this producer. (That said, thanks to the generosity of forumites and other friends I did get to taste the ’82, ’83, ’85, ’88, ’90, & ’96 Salon this past year.) Smile

You're only missing the 1995, then you'd have tasted every vintage back to 1982. Personally, I think you're slacking and really need to improve next year.

Those are three very happy looking cats! Obviously, they lead pampered lives. Terrine de Foie Gras instead of Meow Mix, Vintage Champagne instead of milk. I'm quite jealous! Wink
