Tsunami: and I was just about to bring my tuxedo to the drycleaners...oh well, casual it is. No smoking, no perfume, no problem.
There are plenty of Thai restaurants in Amsterdam; I’ll check some to see whether they serve lunch. Might be tricky to find a non-smoking one, though. I’ll get back on this.

No Clos St. Hune in my cellar, but I *might* be able to get a 1993. Was this a good year?

Cheese: as long as it’s made of milk, I like all of them.

We've got a few options...The evening of the 11th, Sunday (I only work until 1345 that day, and don't have to go to work until 1345 the next day), OR the 14th, a day I may be able to get off if I promise to work sometime during my following three-day weekend. Let me know. From the sound of things, you and your wife may want to stay in Holland longer than just Easter weekend, so perhaps the 14th is better; nevertheless, we're up for either day. Unfortunately, my work has me scheduled for almost everyday during the 9th-14th timeframe--bummer! But we'll work something out. Can't wait!

Ohh, and we love all kinds of cheeses, but we're not connoisseurs by any means. Our first taste of true, amazing cheese was last weekend at the Roots', and WOW was it delicious. But we're learning, and I think it's best to learn against a broad background, so Hard, Half-Hard (I edited this part; before, I had 'Dry', 'Half-Dry': cheese is not wine, Jeff--Duh!), Creamy, Blue, Sheep/Goat, Whatever,--all will be appreciated, if not simply for the great experience. Alright, BRING YOUR CHEESE and BRING YOUR COURAGE! So long!

Stevie: I think 1993 may have actually been a decent year, but I know nothing about Alsace.

I do, however, have one supposedly good Alsace wine: 1998 Domaine Weinbach, Cuvee St. Catherine, Tokay Pinot Gris. Tsunami or anyone have any thoughts on this wine?

the 1993 c.s.h. is a great choice.

about the vintage:
in 1993 trimbach had a great vintage but they had
cellar-problems, one barrel of the cüvee fred. emilie were infected and is gone trough a manolactic fermentation Frown, and the discussion starded if the c.s.h. was also litle infected or not? btw. the c.f.e, trimbach made 2 bottle-fillings with lot number and the number 4 was the bad one!
now to come back to the c.s.h. 93' tasted several times and it's a perfect choice, we will have to open the bottle at least 9 hours in advance!!!!!!!
trust me, open it, taste a small glass, keep it cold, taste again after 2 hours and then we would drink it after 9h, ohhh and 24 hours open it will
not be going down!!

i remember (little cloudy Roll Eyes) personal rating was somewere from 85 - 87 points.

No problem, I will not bring it! I don't know anything about Alsace wines - I just know the St. Catherine is not cheap so thought it may be ok. Maybe the Clos St. Hune will open my eyes to what a great Alsace can be!

and weinbach dos make great wines!

weinbach has great vignards

just not every vintage/vignard match is a winner,
unforunatly this isn't one Frown

the Clos St. Hune 1993 ranges at my personal blindtastings (friend of mine has quite a few of it) from 93 - 95

the best c.s.h. is the
1989 vendage tardive "hors choix"

i do have several bottles but last time i tasted it, it was that-mutch closed like ford-nox!
it showed a nice fruit, was little racy, and had almost non nose.
it needed about 10 day's to open up, that's the only reaseon why i don't bring one to show it to you.

"i do like to talk about wine (also when i bring them) open and above board!
you can never insult my person when some one say's
that the wine i brought is not good (or bad)
because i didn't made it!!!

tsunami, the Van Gogh museum is opened during Easter, and if you haven't been there: it's a MUST.
There are several diamond houses that offer tours, and there is a very large company right across from the Van Gogh. I'll check there opening times (last time I was there I held a diamond worth more than 100.000 Euros...a very strange idea).

I've got a tip on an excellent Thai as well: I'll call them tomorrow to see whether they serve lunch.

Stevie - the store you are thinking of is Costers I think, no? We have visited it twice (in fact I bought my wife's engagement ring there), and the last time we went we were given a tour by a young Canadian woman, who told us that they try to have someone give the tours who not only speaks the customer's language, but is also from the customer's country (we had to present our passport on arrival, before we were allowed to enter). It probably helped that we had bought a diamond years earlier (they knew that about us too), because others have told us that they got no such personalized service. FYI.

snow sucks, cold is worse.......

So, back again from my trip to Spain and what do I see: Stevies first 3 pages thread. Well done!

Bman: Costers... Costers, wasn't that the shop where an employee did put lots and lots of diamonds in a TV-box and simply walked out of the shop???

Tsunami: Looks like you've arranged it all well. Looking forward to the diner (even without the truffles). We're still looking for some nice wines to pair the food and the cheeses the day after. As everybody said already: we/I like all kinds of cheeses, but the smelly ones I prefer.

Love to show you around in amsterdam or just tell you what you should visit. I completely trust Stevie for picking out a Thai restaurant (not at the Zeedijk).

Stevie: just to tease you: I've found a very nice (better priced than over here) Noe 30 year Old PX.

- do you have a camping fuel/gas cooker?
- i have a small selection of cheese but we would need some more, aged gouda and other's could you
take care on that as well?
- flower, salt, sugar, and usual ingrediences should be arround.
- i'll bring cream, butter, and all specials.
- i do have a vintageport open for the sauce.
- fig-bread i can't buy that, but i bring some cooked figs.
- we also like the smelly once Smile
- you and i, we have to work togheter that eavening, we will have fun!
